“ Caraïbes Fricassée of Lambis”
Ingredients: 4 queen cleaned, 5 cives, parsley, thyme, 1 bouquet garni, 4 cloves garlic, peppers 2, 3 tomatoes, 1 lime, oil and salt.
Preparation: Make a court-bouillon with the queen, the bouquet garni, 1 pepper, and 1 clove crushed garlic. Cook about 40 minutes before the pressure cooker. Drain and reserve cooking water. Cut into pieces queen. Chop finely cives and parsley. Overwrite the remaining cloves of garlic. Cut tomatoes into quarters and épépiner. Heat a little oil in a casserole, add spices minced thyme and the other peppers. Stir until a slight coloration. Add the tomatoes, crush them to melt, and add the pieces of queen. Pour a little water. Cover. Simmer over medium heat. When it remains almost as much water, cover the queen of their cooking juices. Correct the seasoning according to your taste. Cook 20 to 30 min. At the end of cooking add the lemon juice on the cooker. |
